Autumn brings with it unique and unmistakable flavours, and among these stands out one of the best-loved traditional sweets: Marron Glacé. This delicacy, a symbol of artisanal expertise and tradition, comes from Marroni - a precious and tasty variety of chestnut - transformed into an authentic delight through an elaborate and meticulous glazing process.

The story of Marron Glacé has its roots in the heart of 17th-century France, although some trace its origins to Italy, particularly to Piedmont. While the exact origins are debated, it is certain that starting from the Renaissance, this delicacy was a luxury reserved for courts and nobility. Over time, France has earned the reputation of being the homeland of Marron Glacé, where it is still produced today using traditional methods and high-quality ingredients.

What makes Marron Glacé so special is not only the quality of the raw materials but also the long and labor-intensive preparation process: the chestnuts are carefully selected, blanched, and peeled with care to maintain their shape. They are then soaked in a syrup of water and sugar in several stages, allowing them to gradually absorb the sweet aroma and become softly candied. The final step involves glazing, which gives Marron Glacé their characteristic shiny appearance and the crunchy exterior that contrasts with the creamy interior.

For over 200 years, Marron Glacé has been an essential ingredient in the creations of Marchesi 1824, representing a key element in many of its preparations. They feature in iconic desserts such as Monte Bianco and Plumcake, and also find a place in the autumn version of the renowned Panettone, or in their purest form, beautifully packaged in pastel-colored boxes.
